If an app only connects over BT + WiFi, how often is someone really going to use that? I mean you have to be within shouting distance. In the case of Briar, it just uses whatever is the most secure method available at that time, and one of the methods is more or less always available.

There’s not really any way to have a strictly “private” search engine because you’d have to either run your own index, which is extremely resource-intensive and now you’re pinging every site on the web with your personal IP, or trust a third party to do it for you. The latter makes a lot more sense. Use Kagi, NeoSearch, DDG, Brave, etc.
Not at all. They’ve gotten some flack for turning over some data to authorities after they were legally compelled, which is something any company will either do or cease to exist. They also got some flack for some dumb statements by the CEO but those don’t affect your privacy.
Proton is nice but still lacking many features. Nextcloud is probably the next closest thing. If you don’t want to self-host, you can just look for managed hosting.
