This article says cheese can be a part of the planetary diet. They aren’t recommending veganism in this piece, they are focusing on whole foods over processed foods primarily, while also advocating plant based food and advocating for e.g. chicken over red meat.
I understand the desire. My friend group tends to make cheese sauces and toppings using cashews and yeast.
I’ve tried that and it tastes ok, but in no way did it taste like cheese.
You’re not going to end up with something which tastes exactly like cheese without going to a highly-processed food.
Pick up some lactic acid from a u-brew/wine store if you want that tangy cheese flavour in cashew cheese. That made a big difference for me.
